This Pumpkin Spice Donut recipe was originally posted in the fall of 2017 and definitely needed some grammatical rewrites for easier reading. The recipe hasn’t changed so I hope you still love them as much as we do.
Pumpkin pie and any variation of, especially a Pumpkin Spice donut basically owns my heart! The smell is enough to stop me in my tracks and the taste makes me weak in the knees. Safe to say, I kind of love it! Ava thoroughly shares this love pumpkin spice donut recipe, Zoe not so much! I figured this Thanksgiving I’d keep the love of pumpkin alive with a Pumpkin Spice Donut.
Bringing the toddlers into the kitchen to help even if it’s just to mix or shake the sugar bag for the Pumpkin Spice Donut is enough to grow a deep love of food which will foster wonderful relationships with food. The more fun they have being involved the more chances that they will be willing to try new foods and experiment on their own. My love of cooking started from wanting to learn how to make “magic” (aka food) happen to like my mom.
There was always something so magical about when my Mom & Grandma would get in the kitchen and start banging pots together. Just when it looked like the biggest bomb went off, something would happen and it’d all come together for one big amazing meal.
The happiest times growing up were always during my Grandparents’ visits and I’d watch the women gather in the kitchen to do something the men couldn’t do. 2 women, a kitchen full of these weird contraptions that didn’t make any sense to a little girl and with like with a click of two heels it went from a messy kitchen to a table full of delicious food. There was nothing that these two women couldn’t do and I want to be able to pass down that gift to my girls as well.
I see cooking as a way to never be without, a house full of family bellies full of good food and a bunch of happy grateful well fed hearts.
Now my recipe below has been adapted to make in the oven. I use my donut maker to make them but you can make this Pumpkin Spice Donut recipe in your oven!
Ingredients for the donuts:
1¾ cups flour
2 teaspoons baking powder
½ teaspoon salt
¾ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon pumpkin pie spice
½ cup canola oil
½ cup packed brown sugar
1 egg
½ teaspoon vanilla extract
1 cup pumpkin puree (not pumpkin pie filling)
½ cup milk
For the topping:
8 tablespoons butter
½ cup sugar
2 teaspoons cinnamon
Instructions
- Preheat the oven to 350. Prepare a mini muffin tin by spraying with cooking spray.
- In a large bowl, whisk together the flour, baking powder, salt, cinnamon, nutmeg, and pumpkin pie spice. In a medium bowl or large measuring cup, whisk together the oil, brown sugar, egg, vanilla, pumpkin puree, and milk. Pour the wet ingredients into the dry ingredients and mix until just combined.
- Scoop 1 tablespoon of batter into each well of the prepared muffin tin. Bake 10-12 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow to cool for 2-3 minutes.
- Meanwhile, melt the butter in a microwave-safe bowl. Add the sugar and cinnamon to a large ziplock bag. Dip the donut holes into the melted butter, then toss with the sugar in the ziplock bag, one dozen at a time. Cool completely on a wire rack.
